Job Description:
  • The incumbent for this position is responsible for the training of the culinary staff in culinary terms, knife skills, cooking techniques, sanitation, HCAAP, and all other related criteria
  • To perform this job successfully, an employee must be able to perform each essential duty satisfactorily
  • The requirements listed below are representative of the knowledge, skill, and/or ability required:
  • Teach culinary employees the basics of food and kitchen safety.  Recognize the food danger zones and basic cooler organization
  • Teach basic culinary terms and how their application is used in a working kitchen
  • Basic kitchen measurements oz., cup, quarts, etc.
  • Teach the importance of FIFO, date dots, waste sheets, transfer sheets and how to read and fill out a par sheet and any other tools used for kitchen communication and food safety
  • Show and demonstrate a competent working knowledge on how to work machinery in the kitchens, mixers, ovens, immersion blenders, vacuum sealers, etc..
  • Introduce basic kitchen tools and how they apply to a modern working kitchen, knife skills and basic cuts, utilizing product for maximum usage
  • Basic stocks and sauces and where they are applied in cooking
  • Teach the various wet and dry cooking methods, sauté, braising, broiler, etc.
  • Assign participants kitchen tasks that allow each individual to gain hands on practice and improve their culinary skills
  • Follow through with team members and encourage their questions making sure that all new employees understand these techniques and following through with remedial training if required
  • Any other tasks assigned by the Food and Beverage Director or Executive Chef
Qualifications:
  • SUPERVISORY RESPONSIBILITIES: All hourly team members in the Back of House Culinary Department
  • APPEARANCE & GROOMING: All employees are required to follow the guidelines set by the Margaritaville Casino Grooming and Appearance Handbook. Departmental guidelines may apply.
  • EDUCATION and/or EXPERIENCE: High school diploma or general education degree (GED); 2 years culinary degree. 3 years experience in multi outlet facility. Supervisor’s skills classes. Sanitation Certificate.
  • LANGUAGE SKILLS: English
  • MATHEMATICAL SKILLS: Ability to calculate figures, amounts, discounts, percentages and apply to practical situations. Basic culinary math
  • REASONING ABILITY: Ability to apply commonsense understanding to carry out written or oral instructions. Ability to deal with problems with multiple variables.
  • CERTIFICATES, LICENSES, REGISTRATIONS: Sanitation Certificate.
  • Culinary Degree preferred but not required.
