Job Description:
  • The following job duties are intended as general examples of the duties of this position and are not all-inclusive:
  • Support and assist the Executive Chef in the oversight of culinary operations as it pertains to venue
  • Review staffing levels to maintain budgeted levels of employment
  • Responsible for training, scheduling, and directing culinary staff, as well as visually inspecting and tasting of all food products to be served to ensure they meet the quality standards set forth by management
  • Preparation of food production, garnishes and overall presentation of product for guest satisfaction
  • Manages department's financial inventory, payroll, and controllable costs
  • Ensure proper receiving and storage of food products so as to comply with health department regulations
  • Attend and conduct meetings with kitchen, steward staff, and managers as necessary
  • Planning, controlling, communicating and implementing procedures and processes for the overall efficient operations of the department
  • Interviews and hires; develop staff, including evaluating and disciplining
  • Meet with directors and managers as necessary to ensure the success of the Catering and Events Center, food and beverage operations, and the company overall
  • Provide various oral and written reports to the Executive Chef
Qualifications:
  • Three to five years of experience as a food production manager, sous chef, or specialty chef with a four year degree in a related field or equivalent work experience
  • Ability to obtain any applicable health certifications
  • Must have or be able to obtain a valid Responsible Vendor card
  • The ability to obtain and maintain any licenses, etc. necessary for the completion of duties and responsibilities associated with this position
  • Ability to enforce and practice all the safety procedures, Health Department standards and applicable OSHA requirements.
  • Ability to manage and resolve complex issues.
  • Can be a high stress environment
